Ethnic Vegetarian Cuisine, find treasures from your corner of the universe!
A little while back, I was savoring my memories of treating my taste buds to succulent Indian food, so I began a search for Indian cookbooks to add to my arsenal. Whilst browsing around and reading reviews of a cookbook that I don’t recall the name of, a reviewer favorably commented on “Madhur Jaffrey's World Vegetarian: More Than 650 Meatless Recipes From Around the Globe” and a couple of other titles.
Madhur Jaffrey’s cookbook is now gracing my collection. What a delight it has been! The author gives an interesting history of the ingredients, personal anecdotes and excellent preparation/cooking instructions. There is a helpful Equipment, Glossary and Resources section. This proved to be handy for the ingredients that are new to me. Some examples are: Fava Beans, Belgian Endive, Fiddlehead Ferns and Azuki (Aduki/Adzuki) Beans.
I’ve made both of the fava bean recipes (check out Stir-Fried Fava Beans with Ginger) and an eggplant recipe. I look forward to experimenting with the wide array of unusual and delightful dishes offered to please just about everyone. Even those who are not vegetarian can probably find a dish to tempt those buds.
Explore and have fun with finding recipes from your background or from other countries that you’d like a taste of. This is a great way to expand your palate. I’ll be doing the same and will share these recipes and more on this site.
